Height Is the Pie Box Spec

Most pie box orders list a diameter and stop there. The diameter matters, but the height is what causes problems: a lid that presses a lattice flat, a meringue peak stuck to the board, or a deep-dish pie that will not close at all.

Pie pans vary in depth, and the baked pie rises above the pan by a crown, a top crust or a topping. A good pie box is set from the pan rim for the footprint and from the tallest point of the finished pie for the height.

Pan Depth and Crown Planning

Typical inside depths for standard pie pans run about 1 to 1.5 in, and deep-dish pans about 2 to 2.5 in. The baked pie usually sits 0.5 to 1.5 in above the pan, depending on the crust and topping. Common stock pie boxes sit at 9 x 9 x 2.5 in, 10 x 10 x 2.5 in and 10 x 10 x 3 in. Those cover most single-crust pies in 8 and 9 in pans. Tall pies need a custom height or a dome.

Footprint: Measure the Rim, Not the Recipe Size

A pan sold as 9 in is measured across the inside of the top edge. The rim and crimped crust add roughly an inch overall, so the pie needs more floor than its name suggests. Add about 0.5 in on top of the outer rim for lifting room.

• 8 in pie: about 9 x 9 in inner footprint.
• 9 in pie: about 10 x 10 in inner footprint.
• 10 in pie: about 11 x 11 in inner footprint.

Fluted ceramic and glass pans often have a wide lip, so measure those directly. A pie that fits a box too tightly is hard to lift out without breaking the edge.

Hand Pies and Small Formats

Hand pies differ a lot from bakery to bakery, so measure yours before setting the box. As a starting point, four hand pies of up to about 3.75 in fit a typical planning size of about 8 x 8 x 2.5 in in a two-by-two layout, while 4 to 5 in hand pies need a footprint closer to 9 x 9 or 11 x 11 in. Single hand pies suit a small tuck-end carton or a window sleeve.

Personal 5 in and 6 in pies usually go in single square boxes sized the same way as full pies: rim plus clearance for the footprint, baked height plus clearance for the depth.

Selling two pies together, such as a holiday pair, works best with a two-bay carrier and a centre divider, or with two matching boxes tied together. Stacking one pie box on another is fine for flat-topped fruit pies in sturdy board, but never put weight on a cream or meringue pie.

Board for the Filling Weight

A 9 in pan holds about 4 to 5 cups of filling, and a deep-dish pan about 6 to 8 cups. That extra weight changes the board you need, because a pie is carried flat from underneath and any sag in the base bends the crust.

• 16 to 18pt SBS (0.016 to 0.018 in): single-crust fruit pies and pies in light foil tins.
• 18 to 24pt SBS or kraft (0.018 to 0.024 in): heavier fillings, custard and double-crust pies.
• E-flute corrugated (about 0.04 to 0.06 in): deep-dish pies and pies that travel by delivery.

Support Under the Pan

The weakest moment is the lift. A customer picks the box up by its sides, the base flexes and a heavy pie can crack across the middle. A round paperboard or corrugated pad under the pan spreads the load and keeps the base flat. A grease-resistant pad or a parchment circle can help manage butter from a bare crust, though results vary with the recipe and how long the pie sits.

Pies baked in metal or foil tins need less support than a bare crust lifted out of the pan, since the tin holds the shape. Tell us which you sell and we will suggest the right base.

Vent Holes, Windows and Handles

A pie boxed warm releases steam that can soften the top crust. Small vent holes in the lid let some of that moisture out. If your pies are boxed after cooling, vents are optional.

A window with clear film shows a lattice or a decorated top in the case. Keep it high enough above the pie that it cannot touch a meringue. Tall pies carry better with a die-cut handle on a gable-style box, but plan that on 24pt board or E-flute so the handle does not tear.

Closures and Assembly

Lock-corner pie boxes fold by hand from flat and suit counter assembly through the day. Auto-bottom boxes pop open in one motion, which helps during busy holiday weeks. Two-piece base-and-lid boxes give the most headroom control for tall pies, since the lid depth can be set separately.

Printing and Branding

One or two flexographic colours on kraft keep setup low for farm stands and seasonal bakeries. Offset on SBS handles full-colour designs and photography. Leave a flat panel or the lid corner for a flavour sticker, so one printed box covers every pie on the menu. Mistakes to Avoid When Boxing Pies

• Measuring the nominal size: a 9 in pan with its rim and crimp needs a 10 in box.
• Forgetting the crown: a lid set to the pan depth flattens a domed top crust or lattice.
• Pressing a meringue: tall toppings need a 4 to 5 in box or a dome, not a standard lid.
• One height for every pie: keep a standard and a tall size so fruit pies do not slide in an oversized box.
• Boxing hot pies sealed: trapped steam softens the crust. Cool first or add vent holes.

Reorders on locked artwork may reduce proofing time because the structure and artwork are already approved, but standard production remains 10–14 business days after artwork approval unless otherwise confirmed.
